Ginger-Simmered Chicken Wings

Ingredients
- Chicken wings 300g
- Ginger 20g
- Japanese sake (Shaoxing wine will give it a more Chinese feel) 1 tablespoon
- Mirin 2 tablespoons
- Soy sauce 2 tablespoons
- Honey 2 tablespoons
- Spring onion (green part optional)
How to make it
- Heat taihaku sesame oil, place the chicken wings skin-side down, and sear both sides lightly.Add water and bring to a boil.
- Add grated ginger, sake, honey, mirin, and soy sauce.
- Reduce to low heat, cover with aluminum foil as a drop lid, and simmer for 10 minutes.
- Turn the chicken wings occasionally and simmer over high heat for 5 minutes.
Then, reduce the sauce until about one-third remains (around 5 minutes). - Finely shred the green part of a leek and add on top as desired.
POINT
- Using honey, known as a natural remedy, may help with recovery from fatigue and support both health and beauty.
- Using HEGE, which has excellent heat conductivity, allows for shorter simmering time.
