Ingredients

  • Chicken wings 300g
  • Ginger 20g
  • Japanese sake (Shaoxing wine will give it a more Chinese feel) 1 tablespoon
  • Mirin 2 tablespoons
  • Soy sauce 2 tablespoons
  • Honey 2 tablespoons
  • Spring onion (green part optional)

How to make it

  1. Heat taihaku sesame oil, place the chicken wings skin-side down, and sear both sides lightly.Add water and bring to a boil.
  2. Add grated ginger, sake, honey, mirin, and soy sauce.
  3. Reduce to low heat, cover with aluminum foil as a drop lid, and simmer for 10 minutes.
  4. Turn the chicken wings occasionally and simmer over high heat for 5 minutes.
Then, reduce the sauce until about one-third remains (around 5 minutes).
  5. Finely shred the green part of a leek and add on top as desired.

POINT

  • Using honey, known as a natural remedy, may help with recovery from fatigue and support both health and beauty.
  • Using HEGE, which has excellent heat conductivity, allows for shorter simmering time.
