Items used | φ250 Open Fire Pot (with Lid)

Ingredients

  • Beef belly (sliced) 100g
  • Onion 1/2 piece
  • Ginger 10g
  • Pickled Ume Plum 2 pieces
  • Shiso Leaves 10 leaves
  • Rice 1.5 cups
  • Soy Sauce 2 tablespoons (Tamari soy sauce recommended)
  • Mirin 2 tablespoons
  • Japanese Sake 2 tablespoons
  • Sugar 1 tablespoon
  • White sesame oil 1 tablespoon
  • Water 300mL

How to make it

  1. Heat White sesame oil in a pan and sauté the onion and ginger.
  2. Add the sliced beef belly, then pour in the sake, soy sauce, and sugar. Cook over low heat while stirring.
  3. To enhance the aroma, add the mashed ume plum and mix well.
  4. Remove all the ingredients from the pan.
  5. Without washing the HEGE, add rice and water.
  6. Bring to a boil over low heat. (Since the pan is already hot, cook on low heat.)
※ The rice will be fully cooked in 10 minutes after boiling.
  7. Let the cooked rice steam for 5 minutes, then place the cooked ingredients on top and steam for another 5 minutes.
  8. Finally, top with shiso leaves, and it's ready to serve.

POINT

  • With HEGE, the rice cooks in just 10 minutes.
  • For best results, use a wooden lid when cooking the rice.
  • Adding pickled ume plum enhances the acidity and deepens the flavor.
